That is why Olivieri SpA, has always invested in the production chain to ensure a production process of the highest standards of excellence.
Quality control, for example, is clearly present from the very beginning of the supply chain: 80% of calves raised for white meat come from our own farms or those governed by agistment contracts, the management of which is directly monitored, with special attention paid to the purchasing of raw materials, to the feed given and to the healthiness of facilities where the animals are raised.
All calves raised are intended for slaughter at the end of the production cycle and are later cut or deboned as requested by our clientele, which is mainly made up by wholesalers, cutting premises and mass retailers, both in Italy and in Europe. Over the years, Olivieri SpA has made many significant investments to modernise and enlarge the existing facility, including in 2006, when the company was completely modernised with the construction of a deboning room, a tunnel freezer and new cold stores for preserving either fresh or frozen bone-in or deboned meat.
The slaughter line was completely overhauled in 2013. The current plant was completed in 2016, boosting the production area with an extension of around 3.000 m2 housing new cold stores for fresh products, an extensive modern store with automated storage system for storing frozen products, a large deboning room, new loading bays and a by-product processing room.
