Production has always been of considerable importance for Olivieri SpA, being viewed as the cornerstone of the supply chain. It is precisely for this reason that all the calves are individually assessed by Davide Olivieri at our lairage facility in Goito (Mn), where every week we take in young Italian veal calves that we select according to specific standards, sort according to their weight and conformation and send, divided into homogeneous groups, to our own farms/farms governed by agistment contracts, all on the very same day.
